How I use IOS7

I did the latest IOS7 update on my iphone5 and Ipad2 and now I can't Delete the open apps in my active bar. I know I saw somewhere about making the text bold but I would have to do a restart at the time I couldnt but know I can, except I cant find where I was to do that it also said I could triple click the home button somewhere to toggle betwwen white & black (like day & night) but its not working and I dont know how to go back there? Help anyone is there a place to type in for instant help when you cant do something?
